Lazy Pea Soup
A recipe for Lazy Pea Soup made with some Very Lazy Garlic. This is a great soup and perfect when you need a quick lunch, or are feeling lazy! There’s a lovely flavour of sweet peas, a hint of mint and a final taste of garlic, which makes it something special.
Lentil & basil savoury pate
Lentil & basil savoury pate is made from brown lentils and despite it looking somewhat bland, it screams with flavour. I wanted to share this to dispel that myth of lentils being boring veggie food for ageing hippies.
It is easy to make and full of protein and fibre. Absolutely fab on homemade crusty bread or as a sandwich filler.
Tomato soup
This is a really quick recipe for tomato soup that you can make and serve within half an hour. It’s a beautiful colour, tastes great and is healthy! There’s no need to make this more complicated than it has to be…
Beetroot & Fennel Risotto
I was thinking about what to cook in January as I went looking around our veggie patch for inspiration. We have an abundance of beetroots at the moments so I picked three of them and walked back to the warmth of the kitchen, grabbing a few other ingredients on the way.
I’m not always a big fan of the risotto but this one turned out to be the most dramatically red and delicious supper.
Moroccan Vegetable Tagine
This recipe uses chickpeas and potatoes instead of meat, and is a great alternative to my recipe for Moroccan Lamb Tagine. It’s not too hot and has a really deep and mellow spiced and slightly sweet flavour. Very tasty and ideal for preparing in advance.
Chunky vegetable and chorizo soup
This soup is sure to warm you up and with all the vegetables will leave you feeling tip-top. Easy and quick to make and perfect if re-heated at a later date.
Carrot & lentil soup
Hello winter, it’s time for soups! I came across this soup on whatsforlunchhoney blog. It looked so pretty and with the addition of lentils, I just had to try it.
Spicy chilli and butternut squash risotto
A lovely comfort food and a different way to serve a butternut squash that’s normally blitzed in a soup or roasted.
