This recipe uses chickpeas and potatoes instead of meat, and is a great alternative to my recipe for Moroccan Lamb Tagine. It’s not too hot and has a really deep and mellow spiced and slightly sweet flavour. Very tasty and ideal for preparing in advance.

My local greengrocer was selling some very ripe avocados so it seemed like the perfect opportunity to make my delicious guacamole.

It takes about 2 minutes to make and is perfect to have as a little snack or as an appetiser. You’ll just need to cut up some peppers, carrots or cucumber to dip in it! The yoghurt I’m using in this recipe is from the Total Fage (pronounced fa-yeh) range. It’s very creamy so is perfect to mix with my super-ripe avocado!

I had not heard of pulled pork until earlier this year. Typically, once you are acquainted with something, you see & hear of it all the time. So, I decided to look into this as it appears to be so popular. I read lots of recipes on the net and there are so many variations and stories about where and how it originated, I got completely confused at first and put it to the bottom of the list of dishes to try.

It kept playing on my mind though and I finally decided to give it a go…

Easy stir fry

This is a really easy stir-fry recipe that’s best served with rice or noodles. The best thing is you can substitute any of the veg you don’t like, with ones you do!
