Lily’s Fairtrade Bacon and Banana Cakes
These bacon and banana cakes are so tasty that you’ll want to bake them all year round, but I think they taste even better during Fairtrade Fortnight!
Choosing Fairtrade over regular versions makes a massive difference to the lives of developing world farmers and their families!
Roast Rabbit in a Chinese style marinade
A recipe for roast rabbit in a Chinese style marindade of honey, spices and ginger.
This works equally well with pork and is great with stir fried and steamed vegetables.
Sweet Chilli Chicken
Sweet chilli chicken is perfect for any novices out there, who like me want to make an exquisite tasting meal that is really easy to prepare. It can be cooked and on your table in 20 minutes, so not a lot of preperation needed!
Chicken and noodle soup
This recipe for Chicken and noodle soup is strongly influenced by my love of Japanese, Chinese and Thai cookery. It contains some strong individual flavours like ginger, lemongrass, garlic and chilli. Combined them with the honey and sherry though and you’ve got a delicious and light soup.
It’ll warm you through and leave you feeling cleansed and satisfied. Just what’s needed to lift the Winter blues and start the year in the best way possible.
Burnt honey and apricot flapjack
This recipe is perfect for lazy Sunday afternoons and demands you enjoy it with a cup of tea – I could probably say that for a lot of things though!
Using burnt honey instead of the usual golden syrup really adds to the flavour of the flapjack and turns them into something a bit special. It’s hard to explain, so you’ll just have to try this recipe!
Pork wonton soup
This is turning out to be one of my all time favourite soups. It has an amazingly fresh flavour and smell and leaves you feeling good. I put this down to the ingredients and their positive effects – honey, ginger, lemon, garlic and I suppose you could count sherry too, right? It’s just like a natural cold remedy.
The recipe includes making your own wonton wrappers, filling and the soup.
Panacotta
For one of the last recipes containing Total’s Greek Yoghurt – this time the 0% one – I’m sharing a recipe for Panacotta inspired by the recipes sent with the yoghurt!
Panacotta is relatively easy to make, but looks impressive when you serve it at the table. You could drizzle honey on top, or maybe make a fruity sauce of some kind. I’ll give you some ideas after the recipe.
Gammon joint, glazed vegetables and a parsley sauce
Gammon joint and parsley sauce is an awesome combination, which is why it’s such a classic recipe. I’ve added a little treat with the glazed carrots and courgettes – the sweetness goes very well with the pork. There will probably be some meat left over, so I’d suggest making yourself another nice meal with cold meat and bubble and squeek. Yum!
Pulled Pork Sandwiches
I had not heard of pulled pork until earlier this year. Typically, once you are acquainted with something, you see & hear of it all the time. So, I decided to look into this as it appears to be so popular. I read lots of recipes on the net and there are so many variations and stories about where and how it originated, I got completely confused at first and put it to the bottom of the list of dishes to try.
It kept playing on my mind though and I finally decided to give it a go…
Chicken and sweetcorn soup
Chicken and sweetcorn soup is an ideal starter for a Chinese meal, or just nice to make as a warming snack. It’s best made with homemade chicken stock, but you could just use stock cubes. Extremely quick to make, but very tasty!
