Ham & Cheese savoury pancakes
This is similar to my sweet pancake recipe, only it has the addition of buckwheat flour which gives the pancakes a richer, nutty flavour, similar to a crêpe – perfect for topping with your favourite filling, which for me is ham and cheese.
Cheese & tomato quiche with sweet onion chutney
This cheese and tomato quiche is perfect as a delicious and healthy light lunch or dinner. The pastry is crumbly and tasty and a perfect contrast to the light and fluffy filling. You can prepare it before hand and it’ll keep for a day or two in the fridge.
Scrambled eggs
You may not be the same, but for me scrambled eggs need to be slightly runny, have cheddar cheese in and, most importantly, enjoyed with a cup of tea. The trick with making scrambled eggs is not to have the heat on too high and to keep stirring the whole time you’re cooking them.
Tangy Mac & Cheese
As with many a popular dish, everyone makes Mac & Cheese in their own variation and everyone thinks theirs is the best. I have recently discovered “amori” which are like macaroni only slightly longer and twisted which retains the sauce better in my opinion.
Fish pie
One of the all time classic recipes, with a few minor improvements. Great comfort food when it’s cold and wet outside.
Cheese sticks
Great for party nibbles! Now you have the recipe, there’s no need to buy them from the shop. They’re so easy to make, and add your own ingredients to.
Croque monsieur
Cheese on toast. You can’t beat it. That is, unless you double deck it and add some ham – then call it a croque monsieur. Great for a lazy brunch, or quick snack.
Macaroni cheese
Could this be one of the all time greatest comfort foods? It’s an easy recipe to master, but there are a few pitfalls! You need to make sure the macaroni isn’t overcooked, and the cheese sauce contains no lumps. I’ll show you my fool-proof way of making this classic dish.
