Kathy’s shortbread
My housemate Kathy made this delicious shortbread a week ago for our annual Christmas dinner with friends before we all head off to see our families.
She got it from her mum who I understand got it from her mum, who… You know what I mean! They made a lovely sweet something to have with our cup of tea at the end of such a big meal and they looked the part when she handed them out to all the guests as a little present to take home.
Christmas tart
The pastry case, courtesy of Kate’s recipe adds a nice little crunch and the smooth custard topping mellows down the rich pudding. All you need to do is add a little dusting of icing and maybe a scoop of ice cream. Delicious.
Poached Pears in red wine and Madeira
A purchase of pears, large and firm, started me off on a search for a new recipe and my limited stock of booze dictated the combination of wine and madeira. They look and taste delicious as they take on the colour and subtle taste of the wines and spices.
Chicken in a sweet red pepper sauce
This oriental dish, has a lovely sweet flavour, which goes very well with the chicken and ginger. Enjoy with rice.
