Popeye’s Pesto (for kids)

This is the second of Fiona Faulkner’s excellent recipes for kids. She’s been designing killer kids menus for luxury travel operator Scott Dunn’s Children’s Clubs that redefine what eating on holiday is all about: throw away ideas that they’re going to eat mac ‘n’ cheese and burgers all holiday and rejoice in the fact that this kind of food could make them avid foodies! She sneaks in vegetables and makes it all irresistibly tasty – so good, in fact, that we’ll be trying them all ourselves too!
The bonus with this dish is that it takes about 5 minutes to make – put the pasta on, start making the pesto and hey presto! (pesto?) it’s ready! Make it more grown up by adding flakes of smoked salmon, asparagus tips and a few cubes of feta cheese.

Serves 4
- 150g fresh spinach leaves
- 20g fresh basil leaves
- 75g grated parmesan cheese
- 2 tbsp lime juice
- 5 tbsp good quality olive oil
- ¼ tsp salt
- Approx 250g dried pasta to serve
Get the pasta cooking.
Blend everything else in a food processor – then stir through the cooked pasta.
