Signature Dish: Creamy Apple Chicken

This is a family recipe handed down to me by my mother-in-law and is always a winner with my children and husband!
- 4 skinless chicken breasts
- 1 Onion, peeled and finely sliced
- 1 clove garlic, crushed
- 150ml apple sauce
- 150ml chicken stock
- 150ml cider
- 1 teaspoon dried tarragon
- 2 teaspoon cornflour (blended with a little water)
- 150g plain fromage frais
Preheat oven 180°C, gas mark 4.
Fry the chicken on both sides until golden then place into a casserole dish. Fry the onion and garlic.
Add the apple sauce, stock, cider, tarragon and blended cornflour and stir until the mix comes to the boil.
Pour the sauce over the chicken breasts and cover. Cook in the preheated oven for 60 minutes.
Before serving stir in fromage frais. Serve with vegetables of your own choice and enjoy!
