Signature Dish: Pantry Pudding

This recipe, handed down from my Ouma (Grandmother), is always quick and easy to make because the ingredients are things everyone has in their pantry or food cupboard! It has a cake like texture, surrounded by oozing thick syrupy goodness. Particularly handy for impromptu dinners or family gatherings!
Serves 6
For the batter
- ½ cup sugar
- 1 ½ cups flour
- 1 tsp Bicarbonate of Soda
- 1 tbsp margarine/butter
- 2 tbsp marmalade/jam
- 1 egg
- a little milk
- 1 tsp ground ginger (optional)
For the sauce
- 1.5 cups sugar
- 1.5 cups boiling water
- 1tsp cinnamon (optional)
Pre-heat your oven to 180°C, gas mark 6.
Put all batter ingredients into a 4 inch deep oven proof dish (eg large round Pyrex dish), mix thoroughly to a slightly sticky dough consistency. Spread evenly across base of the dish.
Mix the sauce ingredients in a jug and stir until sugar the is dissolved, then pour over the batter.
Bake in the oven until brown, approximately 25-30 minutes.
Serve hot or cold with single cream or custard.
