Chinese Sweet and Sour Sauce

In the quest to find the ultimate Chinese Sweet and Sour sauce I have tried a lot of recipes, adapting each to my own taste, but none quite hit the mark. I was shocked to find that the best was the most simple and quick to make! Who would have thought combining vinegar, tomato ketchup and sugar would make the most authentic tasting sauce possible?

Serves 2

  • 70ml white wine vinegar
  • 4tbsp sugar
  • 1tbsp tomato ketchup
  • 1tsp soy sauce
  • 125ml water
  • 2tsp cornflour

Place a saucepan on a medium heat and add all the ingredients, apart from the cornflour. Bring to the boil.

Mix the cornflour with a little cold water and pour into the sweet and sour sauce. Stir until the sauce is thick.

Simmer for a further 5 or so minutes, with the lid on. Serve.

To make the sauce extra special, finely slice some peeled ginger, carrot and some peppers. Add them to the sauce and simmer for a further 10 minutes with the lid on.
