Leek, Spinach & Potato Gratin

This yummy dish works well as a side, or a main with a salad, and is a total gorge fest. Best of all it’s cheesy peasy to make! Warning: NOT FOR SLIMMERS!
Leek, Spinach & Potato Gratin
Serves 4
- 800g of maris piper potatoes, thinly sliced (slice on cheese grater works perfect!)
- 2 leeks halved length ways and sliced small, halved and sliced
- 1 packet of Parma ham (6/8 slices), shredded
- big handful of spinach, shredded, shredded
For the sauce
- 2 cloves of garlic crushed or handful of wild garlic leaves
- 150ml of full fat milk
- 150ml veg stock
- 1 carton of double cream
To garnish
- Cheddar cheese, enough to cover your dish
Mix the ingredients in a big bowl and transfer to a 2 to 3 litre oven proof dish.
For the sauce
Pre heat your oven to 190°C/170°c FAN.
Add the sauce ingredients to a sauce pan and bring to the boil, stirring constantly. Season with salt and pepper to taste.
Add the sauce to the potato mixture, cover the top with grated cheese and loosely cover with foil. Cook in the oven for 35 mins, then remove the foil and cook for a further 25 mins to brown off the cheese - times may vary slightly depending on the thickness of the potato.
Remove from the oven and leave to stand for 15-20 mins (ouch hot!). Tuck in! x
