Chicken and Giant Couscous Salad
A refreshing summer salad that’s perfect for a picnic in the park. Chicken is welcome on any picnic as far as we’re concerned, but we particularly love it with giant couscous, radishes and pine nuts.
Chicken and Giant Couscous Salad
Serves 4
- Some cooked chicken slices
- Giant (Israeli) couscous
- 1 Orange pepper, deseeded and chopped
- A couple of handfuls of pine nuts, toasted
- A bag of rocket
- Radish, washed and sliced
- Black de-stoned olives
- Raisins
- Olive oil
- Lemon juice
- Salt and pepper
Cook the couscous by adding 1 ¼ cups of boiling water to 1 cup of couscous and simmer for 8-10mins.
While it’s cooling prepare your pepper, pine nuts and radish. Refresh with a good glug of olive oil then add the rest of the ingredients (except the rocket – add this once at your picnic or else it goes soggy). Add big squeeze of lemon juice and pack to take with you.
Serve with the cooked chicken, rocket and a side of crusty buttered bread.

Yep, you can get it from Waitrose – £1.99 for 300g – and I’m sure other supermarkets sell it too!
