Cranachan is a Scottish pud which uses fantastic ingredients such as oatmeal, raspberries and honey, not to mention a little malt whisky!
Serves 4
- ¼ cup medium oatmeal
- 160g raspberries
- 4 tbsp of a good malt whisky
- 4 tbsp heather honey
- 600ml double cream
Toast the oatmeal in a dry frying pan, stirring often, until it starts to toast and change colour slightly. Cool.
Whip the cream with the whisky and 2 tablespoons of the honey to soft peak stage.
In tall glasses (liquer coffee glasses work perfectly) layer cream, oatmeal, raspberries and repeat. Top with a couple of raspberries and dribble over the remaining honey.
Can be served with wafer thin shortbread biscuits and a dram on the side!
