Kathy’s shortbread
My housemate Kathy made this delicious shortbread a week ago for our annual Christmas dinner with friends before we all head off to see our families.
She got it from her mum who I understand got it from her mum, who… You know what I mean! They made a lovely sweet something to have with our cup of tea at the end of such a big meal and they looked the part when she handed them out to all the guests as a little present to take home.
She was happy to share the recipe and we both hope you enjoy them as much as we did this festive season!
Kathy’s shortbread
- 225g plain flour
- 1 pinch salt
- 115g rice flour
- 115g caster sugar
- 225g butter
Sieve both flours and the sugar into a bowl.Rub in the butter and knead until a smooth paste forms.
Turn into a plain floured surface and roll to approximately 1cm thick.
Cut into the desired shape and place on a cold and greased oven tray.
Cook in a slow oven for 45 minutes to an hour.
Enjoy with tea, a glass of milk or hand out to friends and family!
