Muesli
Makes 1 batch
- 1lb rolled oats or oat flakes
- 8 oz bran flakes
- 3 oz raisins
- 3 oz dried cranberries
- 2 oz pumpkin seeds
- 1 oz flax seeds
- 2 oz sunflower seeds
- 3 oz chopped roasted hazel nuts or chopped brazil nuts
All the ingredients are mixed together and stored in an airtight box with a 2 oz measure, which is quite a large daily portion. Serve with semi skimmed milk.
I have also added roasted soya flakes but did not like them. I think chopped dried apricots/ figs and apple flakes are very complementary but are better added with the serving, because added to the recipe some of the crispness in compromised. Dried milk powder adds a creaminess that I enjoy.
There is sufficient fruit to avoid starting the day without a refined sugar kick. This is not a cheap breakfast if you are extending your store cupboard to have the ingredients to hand but much better value than a commercial luxury muesli.
For a Sunday special serve in a glass layered with fresh raspberries and Greek yoghurt. It looks superbs.
