Greek salad

Serves 4

  • 250g baby plum tomatoes
  • 1 handful black olives, stones removed
  • ¾ medium sized cucumber
  • 1 red pepper
  • 1 ripe avocado
  • 200g Greek feta cheese
  • 1tsp dried oregano
  • 3tbsp olive oil
  • 1tbsp lime or lemon juice
  • salt and pepper

Begin by cutting the tomatoes and olives in half, and putting them into a large salad bowl. Cut the cucumber, pepper, avocado and feta into 1cm cubes, and add to the bowl. Add the oregano, olive oil and lime or lemon juice.

Using a large spoon, or clean hands, mix everything together. Season with a little salt and pepper to taste.
