Egg fried rice

This is to go with any main dish. Ham is optional, as are prawns, but both together are great.

Serves 2

  • 1 cup of rice
  • 1 egg
  • ½ cup peas
  • ½ onion
  • ½ cup cubed cooked ham
  • 1 cup prawns
  • soy sauce
  • vegetable or sunflower oil

Cook the rice as per the instructions on the packet. Drain. Heat up the oil in frying pan. Add the onions and cook for 1 minute.

Add the rice and fry gently for 1 minute, then make a hole in the middle, pushing the rice out into a ring with a wooden spoon. Crack an egg into the centre and let it cook for 5 to 10 seconds, then fold in the rice. Make sure the rice and egg are thoroughly stirred together.

Add in peas, prawns and ham, then douse everything in soy sauce to taste. Cook for another three to four minutes or until prawns are ready.
