Sweet and spicy quinoa salad

Serves 3

  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1 sweet potato, cut in small cubes
  • 1 red bell pepper, diced
  • toasted almond flakes
  • 100g Feta cheese crumbled
  • cayenne pepper to taste
  • extra virgin olive oil
  • juice of 1 lemon
  • salt and pepper to taste

Simmer the quinoa in the water for about 15 minutes, or until water is gone and quinoa is light and fluffy.

Meanwhile, coat the sweet potato and red pepper with cayenne pepper and one tablespoon of olive oil, and roast in the oven for the same time.

Toss together the quinoa, sweet potato, pepper and the remaining ingredients in a large bowl, season with salt and pepper, allow to cool and enjoy!!

    I made this today. It was the first time I’d tried quinoa, and I wasn’t quite sure if I was going to like it.

    I have to say though, despite it being healthy, it’s really delicious too! The more I ate, the more I wanted…very satisfying. I didn’t have any almonds, so used some toasted pine nuts instead – I think it’s important to have something with a little bite, and this worked perfectly. Top recipe Carla!
