Salsa fresca!

This is great for those summer months when it’s hot outside, or you’re enjoying eating in your garden. It’s really fresh and juicy and if you keep it chunky all the individual flavours of the fruit and vegetables will come through in each mouthful. The spring onion also adds a nice different texture. I think it’s great served with salad, grilled meat or fish. It doesn’t stay fresh for too long, but you can make it in minutes!

Serves 2-3

  • 2 inches cucumber
  • 2 tomatoes
  • ½ ripe-ish avocado
  • 2 spring onions, washed
  • squeeze of lemon juice
  • glug of olive oil
  • salt and pepper
  • pinch on chili flakes

Chop up all the fruit and vegetables into 1cm pieces and mix together in a bowl. Add the olive oil, chill, salt and pepper. Add the lemon juice just before serving, and give it another little mix. Yum!
